Course Content

Progression : Lismullin Hospitality Services Centre has established progression paths into the Advanced Certificate programme in Tourism Hospitality in the Institute of Technology Tallaght and Dundalk Institute of Technology. Lismullin graduates who have achieved distinctions in five modules will be eligible to apply for transfer to year 2 of the Advanced Certificate, subject to interview in the relevant IT.

LHSC is currently accepting enquiries and applications for the September 2008, Hotel and Catering Course leading to a FETAC level 5 Award. The components of this one-year course are a combination of work-based training and classroom learning in the following Modules:

Food Preparation
This module has been developed to provide an understanding of the role of the kitchen operation within the structure of the hotel, catering and tourism industry. It is designed to facilitate integration into the work place and/or into further professional training. Opportunity is provided to develop specific skills to beyond an initial level in all departments

Food and beverage service
This module provides an understanding of the role of the food and beverage department within the structure of the hotel, catering and tourism industry. Learners who successfully complete this module will be able to acquire food and beverage service skills and knowledge and develop related hospitality skills.

Safety and health at work
This module is designed to provide the learner with the skills and knowledge to promote and maintain safety and health in the work environment.
 
Hospitality and accommodation
This module has been developed to provide an understanding of the role of the hospitality and accommodation department within the structure of the hotel, catering and tourism industry. It is also designed to help the learner develop core transferable skills and knowledge applicable to the hospitality service. The module aims to provide a basis for further study and to motivate career development.
Communications
Communication skills are highly valued in the workplace but this module extends beyond exclusively vocational skills, recognizing that the acquisition of these skills is a life-long process, and central to personal, social and professional development and fulfilment.

Tourism awareness
The purpose of this module is to enable the learner to understand the fundamental concepts of national and international tourism and to appreciate its role in the Irish economy. It is intended to prepare the learner for employment or further training in a related area.
 
   
   

Work experience placements
Work experience is a planned experiential learning activity and is an integral part of an educational process. It involves learners preparing and planning for work, working under direction in a specific vocational area and reviewing and evaluating that work. The experience of work enables learners to develop work skills, evaluate employment opportunities and cope with changing work environments. LHSC students will have a strong component of work experience on site.  However they will also have at least two 2-week placements in Five and/or Four Star hotels (in Ireland or abroad) and familiarization visits to industrial and hospital catering establishments which will give them an overview of the career options open to them.
